I’ve seen a couple of suggestions, like layering the bottom of the crock pot with some wadded up some foil and placing the whole chicken on top of it. Or placing the chicken on top of vegetables in the crock pot. Is there a way to get the chicken browned in a crock pot though? Like a rotisserie chicken?

Yes you can! But do not add any liquid what so ever. It will make liquid on it’s on especially veggies. I would cut on onion 1/2 and layer on the bottom under the chicken. Put salt, pepper, garlic powder, paprika, or what ever spices you like on the chicken first. Lay the chicken on the onions, lay a few more onions on top. Cook on high for a few hours. If you add liquid it will be like soup and not like roasted. Keep it up off the bottom.
You could sear the chicken as to brown it before you put it in the crockpot. Or brush some browning sauce like maggie or kitchen bouquet over the top when you put it in.
